CRAFT METHODS
Craft methods on pot stills come
from hundreds of years of experience. They come from small producers
-- individual craftsmen working with local ingredients. Each distiller
developed personal insights, little idiosyncracies. These skills were
passed for centuries from master to apprentice.
POT STILLS
Pot stills have been around for centuries.
The old-fashioned word for pot still, “alambic” or “alembic,”
is an Arab word from the ancient Greeks, who got the word from the
Egyptians. So stills go way way back.
Until the early 1800s, all stills were pot stills. They started out
as ceramic pots used by alchemists. Nowadays, the best pot stills are
made out of copper. Pot stills allow craft distillers to concentrate
their efforts (and their talent) on one small batch at a time.
Botanical Infusions:
Juniper Berries, Coriander, Angelica, Orris Root, Lemon Peel, Orange peel, Cubeb
Berries, Star Anise, Cinnamon Bark, Rose Petals and a “secret” ingredient.

Tequila is a Mexican liquor distilled from the fermented juices
obtained from the hearts of blue agave plants grown in the Tequila
Region. The liquor gets its name from the town of Tequila located
in the state of Jalisco where production started more than 200 years
ago.
Blanco/Platino: Tequila that is not aged and usually bottled immediately
after distillation
Gold/Oro: Blanco Tequila that has had caramel
colouring, sugar based syrup, glycerin or oak extract added to imitate
reposado tequila.
Reposado: Tequila that has been aged in oak barrels
for a minimum of 3 months but not longer than one year.
Anejo: Tequila aged in oak barrels longer than
1 yr but not more than 3 years. |
