TEQUILA
Corralejo Tequila was founded in 1755 and was
the first commercial producer of tequila in Mexico, with copper
pot stills from Spain, wood-fired adobe brickovens, and French oak
barrels for aging. Today, over 200 years later, tequila production
continues at Corralejo much as it did in the past. Hand-harvested
weber blue agave hearts (pinas) are slowly baked in adobe ovens,
then crushed in a stone mill; the "aguamiel" (honey water)
is fermetned, then double-distilled in copper pot stills, and aged
in barrels made from Limousin white oak barrels from France. Each
Corralejo bottle is hand-blown and hand-labeled, individually numbered
and registered to ensure its authenticity. Corralejo Tequila takes
pride in its heritage as the top quality, hand-crafted producer
of Mexico's first and finest tequila.

The Queen Tini
2 oz Van Gogh Pineapple
2 oz Lemonade
splash of grenadine
Pour ingredients into a cocktail shaker. Add crushed ice and shake
vigorously for five seconds. Strain into a martini glass.
Chi Chi Martini
1 oz Van Gogh Coconut
1 oz Van Gogh Pineapple
1 oz Pineapple Juice
*same prepartions as above
Petroleo
1-1/2 ounces tequila
1 ounce Mexican lime juice
1 serrano chile halved from top to bottom
Pour the tequila and lime juice into a small glass. Add salt, pepper,
Maggi sauce and Worcestershire sauce to taste. Mix ingredients.
Add one half of the serrano chile and one or two ice cubes. Use
Reposado tequila.
